The journey

The south, unhurried

The south runs on water: a city built on a river, a delta that is more canal than land, and an island so far offshore it kept its forests and its silence. Eight nights, nine days, decelerating by stages from Saigon's energy to four nights at Con Dao where the schedule finally dissolves.

Two nights in District 1 to take the city at street level: the Post Office and the Opera House, lacquer and propaganda-poster ateliers, and after dark the alleys, where the best kitchens in the city seat six people at a time. Your guide grew up here and remembers the city in three historical registers; the walking is really listening.

The drive south crosses into a country made of water, and the arrival makes the point: Azerai sits on its own islet in the Hau River, reached by the lodge's boat. The afternoon is a bicycle turn through the orchards and lanes of the islet, and the evening is the river traffic sliding past the lawn, barges low with rice and fruit.

A noodle workshop and a garden lunch

Out before sunrise by private boat to Cai Rang, the delta's great floating market, where each vessel advertises its cargo by hoisting it on a pole: pineapples, taro, watermelons by the tonne, coffee sellers weaving between hulls. Breakfast is noodle soup ladled boat to boat. On the way back, a rice noodle workshop and lunch in a garden house. The afternoon belongs to the pool and the river.

A short flight puts you on Con Dao, an archipelago far enough offshore that history mostly left it alone and the forests come down to the beaches. The villas stand on their own bay with the jungle behind. The only decision left in the day is whether the pool beats the sea, and it is not a decision that needs defending either way.

Two days written in pencil. A boat can take you around the archipelago's empty bays and the marine park's reefs; the island's history, a penal colony the Vietnamese treat as sacred ground, is told quietly and well in town for those who want the fuller picture. In season, rangers take small groups to watch green turtles nest after dark, one of the sea's oldest rituals. Otherwise: the bay, the spa, the forest walk to the next beach along.
